I finally got my hands on some matcha powder (that wasn’t extortionately priced!) so I made some cupcakes that I’ve been meaning to try out for quite some time. Just before Christmas, I made sticky toffee pudding for the first time from scratch and it’s easily one of the simplest puddings to make and tastes much nicer than the shop bought variety. As I had a few leftover dates to use up, I thought I’d try it out as a cupcake by adjusting the pudding recipe slightly and adding frosting. The end result? Super yummy (if I do say so myself), super sticky and just perfect for a sugar fix. Recipe follows..

Just a quick post this week, I made some peach cupcakes for a birthday last week – I was attempting to recreate the Peach Melba cupcakes I made recently, but didn’t have the peach melba icing sugar from last time. I ended up making a vanilla cupcake, with a peach filling, topped with a vanilla frosting.
