What better way to celebrate Easter than enjoying chocolate cake alongside some more chocolate.. .and a bit more chocolate? A chocolate and vanilla marble cake, filled with vanilla swiss meringue buttercream and covered in a chocolate ganache drip.

Just before Christmas, I made sticky toffee pudding for the first time from scratch and it’s easily one of the simplest puddings to make and tastes much nicer than the shop bought variety. As I had a few leftover dates to use up, I thought I’d try it out as a cupcake by adjusting the pudding recipe slightly and adding frosting. The end result? Super yummy (if I do say so myself), super sticky and just perfect for a sugar fix. Recipe follows..
Anyone who has lived in Hong Kong will be familiar with these egg waffles or 雞蛋仔 (this literally means “little eggs” in Chinese). These were my favourite snack when I was younger and even now to be honest. They remind me so much of Hong Kong and were always a tasty treat. I always wished that we had them here in the UK and fast forward a few years, a stall popped up in London’s Chinatown, selling these egg waffles for £2.50 a piece (a rip-off compared to HK prices!)
